I Can’t Live Without Kimchi

That’s Why I Made a Stainless Kimjangdok in Red

Kimjang (kimchi-making) season is just around the corner. Just thinking about tearing a piece of freshly made kimchi and putting it into my mouth makes my mouth water. Kimjang is a Korean custom of making and sharing kimchi after the cabbage harvest, so families could enjoy it throughout the cold winter months.

This communal tradition has been passed down for generations and was inscribed on UNESCO’s Representative List of the Intangible Cultural Heritage of Humanity in 2013. Every kimjang season, news about soaring cabbage prices competes with reports about the College Scholastic Ability Test, as if they’re rivals — a sign of how deeply kimjang is woven into Korean identity.

So what has kept this tradition alive to this day? For people who can’t live without kimchi, new inventions have replaced the traditional onggi (earthenware jar) and jangdokdae (outdoor pottery platform). First came the kimchi refrigerator, but before that came an ingenious invention in between: the stainless-steel kimjangdok (kimchi jar), dressed in red or orange plastic.

Do you remember keeping one on your apartment balcony in the late 1980s? It saved people the trouble of wrapping onggi in polystyrene. Koreans’ passion for kimchi even fused science and technology with kimchi containers. 김장철이 오고 있습니다. 갓 담근 김장김치를 쭉 찢어서 입에 넣는 상상만으로도 입안에 침이 고입니다. 김장은 김치를 담그고 나누는 문화로 배추 수확 철에 김장김치를 담가서 겨우내 먹던 풍속입니다.

세대를 넘어 공동체가 김장을 이어오는 문화는 2013년에 유네스코 인류무형문화유산으로 등재되었습니다. 김장철이 되면 배춧값을 걱정하는 뉴스가 입시 철 수능 뉴스와 라이벌처럼 보도되는 것을 보면 김장은 한국 문화의 중요한 정체성으로 보입니다.

이처럼 김장을 지금까지 이어올 수 있는 힘은 무엇일까요? 김치 없이 못 사는 사람들은 장독대와 옹기를 대체할 새로운 발명품을 만들었습니다. 바로 김치냉장고입니다. 그런데 김치냉장고는 그냥 개발된 것이 아닙니다. 옹기와 김치냉장고, 그 발효 과학 사이에 신박한 발명품이 또 있었으니 바로 스테인리스 김장독입니다.

1980년대 후반, 스테인리스 김장독에 김치를 담가서 아파트 베란다에 두던 때를 기억하십니까? 옹기를 스티로폼으로 감싸는 수고로움을 덜어주던 빨간색 혹은 주황색 플라스틱 옷을 입은 스테인리스 김장독 말입니다.

김치를 사랑하는 한국 사람의 욕망은 김장김치 용기에 과학기술을 접목했습니다. 이러한 변화는 국립민속박물관 상설전시관 1 한국인의 오늘에서 확인하실 수 있습니다.
